Dr. Mina Dokouhaki is a Lecturer in Food Technology at RMIT University, where she actively contributes to teaching, research, and leadership within the Food Science and Nutrition discipline in the School of Science.
Mina holds a BSc and MSc in Food Engineering from prestigious universities in Iran and a PhD in Chemical Engineering from the University of Melbourne. Her expertise primarily focuses on food biopolymers and colloids, bioactive compound delivery, surface chemistry, functional foods, emulsions, microencapsulation, and food processing.
